Harvest manual
Vinification The grapes are hand-picked and destemmed, followed by gentle pressing. The must is then inoculated with selected yeasts. Fermentation lasts 15 to 20 days and takes place at a controlled temperature of 14 to 16 degrees Celsius. Afterwards, the wine matures for eight months in French oak barrels, followed by another six months in stainless steel tanks with regular bâtonnage of the fine lees.
