Altitude 500 meters above sea level
Vineyards Organic (in conversion) and old vines of at least 50 years old from which Torre de Palma sources its grapes. They participate in the WASP project. This is the Wines of Alentejo Sustainable Program. Through this program, winemakers collaborate to preserve the Alentejo wine region, which suffers from rural-to-urban migration, within the region. Additionally, the winemakers aim to work as sustainably as possible.
Harvest Manual
Vinification After the harvest, the grapes are stored for 24 hours in a cold room at 3 degrees Celsius. After this, the grapes are selected, followed by a gentle pressing. The grape juice ferments in an open, cooled marble tank. After alcoholic fermentation, the wine matures for 10 months in Italian amphorae.
